For Anyone Sick of Making Banana Bread

Pretty sure you’ve already tried making banana bread at least once during this quarantine period. You’ve also probably tried different variations of it.

So why don’t you make something a little different? This one-bowl recipe is easy to make and you can even skip the frosting and it will still taste delicious. Plus, this recipe only calls for two overripe bananas so you don’t need to wait very long to make them.

Banana Nutella Muffins With Cream Cheese Frosting

Ingredients

Muffins

  • 1/2 cup unsalted butter melted
  • 1 cup brown sugar
  • 2 medium-sized bananas overripe
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 12 tsp Nutella

Cream Cheese Frosting

  • 1/2 cup cream cheese softened
  • 2 tbsp butter softened
  • 1 cup confectioner's sugar
  • 1 tsp vanilla

Instructions

To make the muffins

  1. Preheat your oven to 350℉ and line a muffin tin with cupcake liners. Set aside.

  2. Melt butter in a bowl. Whisk in sugar until butter has cooled down. Mash bananas into the butter and sugar mixture. You can keep the bananas chunky according to your preference. Whisk in the egg and vanilla.

  3. Sift flour, salt, and baking soda then gently fold into the mixture. Mix just until combined. Do not overmix.

  4. Using a scoop, divide the batter into 12, filling the liner 3/4 full.

  5. Top each one with Nutella and use a toothpick or knife to swirl it around the batter. You can opt to top the muffins with a slice of banana, too.

  6. Bake for 20-25 minutes until the tops are golden brown and a toothpick inserted in the middle of the muffin comes out clean.

  7. Cool on a wire rack before frosting.

For the frosting

  1. Whip cream cheese and butter together until combined.

  2. Add confectioner's sugar gradually and whip until smooth. Add vanilla and mix.

  3. Top cooled muffins with frosting either with a piping bag or with an offset spatula.

    I just made this hihi super yum and moist, though some of mine sank in the middle (I remember you telling me before why this happens, but I forget). Taste was perfect, with slightly toasted tops and moist inside!
